Most chefs will tell you to season with salt early and often while cooking. I ran this experiment to show why that makes for especially delicious food. And interesting twist: Counter to what many sources claim, adding salt early and often won’t result in using less salt overall. It’s the opposite because salt added late, or even at the table, hits our tongue directly.
